Covered the P’s


The holidays required more of my attention than expected which explains why I’m just now going through our photos from Europe.   While reviewing our photos I noticed a trend.  It looks like we covered most of the p’s in the food category.

And a panini almost everyday (I forgot to take photos, probably too busy eating.)  Anyway, I came home with a craving for more panini so I created my own version using a regular pot and pan.  All you do is place some ham, cheese, tomato and arugala between 2 slices of good artisan bread.  Then butter the pan (preheated), add the sandwich (set heat at low to medium), place a heavy pot on top of the sandwich and toast both sides until the center is warm and melted.  If the pot isn’t heavy enough, just place a regular tin can inside.  This pressed sandwich doesn’t sport the grill marks that a fancy panini machine would deliver, but it’s quick and easy and tastes just as good.   It just occurred to me that maybe my version is more like a cuban sandwich than a panini.  Oh well, it’s still yummy and I don’t need to bother buying another kitchen gadget to make it.

  1. Those churros look so yummy! Wish I had one with my cup of coffee right now! And thanks for passing along your own ‘panini maker’ – I have to admit I hadn’t even thought of doing that and I’m going to try it out.

    If you love pizza and pasta you are going to LOVE Italy! NEVER had a bad meal there. Definitely some of the best food in the world. Notcie I’m trying to encourage you to get over there, ha ha!

  2. Thanks for the tips and recipe…..Now, i’m hungry and it isn’t for wwheat cinnamon toast…..

    The pizza is what is getting to me….I love pizza……i could eat it every meal…shouldn’t but could….

    I think your method is great, you used what you had and came up with a
    great sandwich…yum! My Dad use to grill buttered English muffins, similar to that…golden on top with a bit of a crunch…good memories.

    Now, that i’m drooling, off to pour another skinny cap and make toast, while dreaming of ooey,gooey, chewy pizza… : )

  7. Really yummy selections! I love panini’s too. You’ve given me a craving to maybe cook some up tonight. I don’t own a fancy panini machine either. I always add a heavy can or two for more pressure. Thanks for sharing! 🙂
